The selection of wines

At Maison 1895, we know that the quality of our alcohol-free wine is based on a careful selection of the best original wines. This essential choice, guided by our expertise, ensures that each wine chosen contributes to sublimating the final experience after dealcoholization.

At Maison 1895, we carefully select wines with rich and complex aromas, perfectly balanced. Thanks to our partnerships with passionate winemakers, we choose exceptional cuvées that preserve their depth, texture, and character after de-alcoholization.

In the heart of La Mancha

Among the wines we select for our Maison 1895 creations, some come from La Mancha, in the heart of Spain. This sun-drenched terroir, known for its ideal conditions, produces grapes rich in aromas. This quality allows us to craft non-alcoholic wines of exceptional finesse.

Dealcoholization

The careful selection of our wines is the first cornerstone of our expertise. Once chosen for their aromatic richness and complexity, these wines are ready for the next step: dealcoholization. This delicate and precise process aims to remove the alcohol while preserving the original characteristics of the wine.

Each wine used in our dealcoholisation process is carefully selected from the best grape varieties, guaranteeing optimum quality right from the start.

The wine is degassed using a vacuum de-aerator, a process that eliminates dissolved gases while preserving the wine's aromas and structure.

This system reduces the pressure below atmospheric pressure, lowering the ‘boiling’ temperature of the alcohol to around 40°C, compared with 78°C at normal pressure.

The blending

The blending is the final touch of our process, essential to ensure that each bottle of Maison 1895 non-alcoholic wine offers an exceptional tasting experience.

Blending a non-alcoholic wine is a crucial step in restoring balance and complexity to the product after the alcohol has been removed. This process allows us to correct imbalances, such as excessive acidity, too much astringency, or a lack of roundness. The removal of alcohol can reduce the richness and length of the wine, requiring adjustments with elements like concentrated or rectified grape must to soften the acidity and rebalance the texture.

The goal is to create a harmonious wine that stays true to the original quality while meeting the expectations of consumers. This process requires great precision to deliver a final product that is both balanced and flavorful, while preserving the expression of the non-alcoholic wine.
